Smoked Peach Cobbler

Ripe peaches get soft and jammy under gentle smoke, then topped with a buttery, golden crumble. This is the kind of dessert that turns a backyard smoke session into a full event. Simple ingredients, big payoff.

Ingredients

  • 6 cups fresh peaches, peeled and sliced (or frozen, thawed)
  • 3/4 cup granulated sugar, divided
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, melted
  • 1 cup milk
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Prep the peaches. Toss the sliced peaches with 1/4 cup sugar, lemon juice, and cinnamon. Let sit for 10 minutes to release their juices.
  2. Make the batter. Whisk the flour, remaining 1/2 cup sugar, baking powder, and salt together. Stir in the melted butter and milk until just combined.
  3. Assemble. Pour the batter into a greased cast iron skillet or foil pan. Spoon the peaches and their juices evenly over the batter without stirring.
  4. Smoke. Preheat your smoker to 350°F using a mild fruit wood like apple or peach. Place the pan on the rack and smoke until the top is golden and set, and the fruit is bubbling at the edges.
  5. Cool slightly. Let the cobbler rest for 10 minutes before serving warm, topped with vanilla ice cream if using.

Notes: Peach or apple wood keeps the smoke flavor subtle and lets the fruit shine. If your peaches aren't very ripe, add an extra tablespoon of sugar to the peach mixture.
