Marinated beef cubes and vegetables pick up smoky char on skewers, making an easy, hearty meal for a small crew. This is the kind of recipe that turns a weeknight into something worth savoring. Simple ingredients, big payoff.
Servings: 4
Smoker Temp: 275°F
Smoke Time: about 45 minutes to 1 hour
Ingredients
- 2 lb sirloin or ribeye, cut into 1.5 inch cubes
- 1/4 cup soy sauce
- 2 tbsp olive oil
- 2 tbsp Worcestershire sauce
- 3 garlic cloves, minced
- 1 tsp black pepper, freshly ground
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 8 oz mushrooms, whole or halved
- Wooden or metal skewers
Instructions
- Marinate the beef. Combine soy sauce, olive oil, Worcestershire, garlic, and pepper. Add the beef cubes and marinate at least 1 hour, or overnight for deeper flavor.
- Assemble the skewers. Thread beef, onion, peppers, and mushrooms alternately onto skewers.
- Smoke. Preheat your smoker to 275°F. Place skewers on the rack and smoke, turning once, until beef reaches your preferred doneness.
- Rest and serve. Let kabobs rest a few minutes before serving.
Notes: If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
