The potatoes above were smoked with hickory, then all the pulp was removed and mashed with milk, butter, sour cream, and one egg. Seasoning added was: a pinch of white pepper, a pinch of nutmeg, and fresh ground pepper and salt to taste.

Top with bacon crumbles.

You can hold this in the refrigerator and reheat in the oven later at 350F for 40 minutes.

This recipe is great for making in the morning and serving to company in the evening.
