Smoked Tri Tip

A tri-tip is triangular from the bottom sirloin cut and usually weighs around 5 pounds untrimmed.

Rub:

Equal Parts:

Salt

Cumin

Onion Powder

Black Pepper

Paprika

Granulated Sugar

Smoke for about 2.5 hours at at 230°F but better to use a temp thermometer with 2-3 oz. of cherry and one chunk of hickory wood.
