Smoked Jerky by Matt Grubb
Smoke Jerky for 2 hours using no dryer. Smoke at 150°F degrees.
Dump the smoke box, ashes and wood. (BTW I only use 1 small chunk of hickory or mesquite.) Make sure not to dump anywhere combustible. And turn down the heat to 120°F degrees--add jerky dryer and check every hour or so until dried to your liking.
