Jerk Ribs
2 racks of country style pork ribs
2 tbs. dried minced onions
1 tbs. onion powder
4 tsp. ground thyme
2 tsp. ground allspice
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 tbs. granulated sugar
2 tsp. black pepper
1 tsp. cayenne pepper
Blend all ingredients well. Rub all over ribs. Smoke-cook 3-4 hours at 225°F using 2 ounces of hickory.
