Apple Wood Smoked Shrimp

Ingredients

  • 2 Pounds raw shrimp

  • 1 Lemon

  • 1/4 cup Worcestershire Sauce

  • 1/2 Pound Melted Butter

  • 1/4 cup Chopped Parsley

Small Batch of Rub

  • 1 T. Season Salt

  • 1T. Lemon Pepper

  • 1/2 tsp. Onion Salt

  • 1/2 tsp. Celery Salt

  • 1/4 tsp. Cayenne Pepper

  • 1 tsp. Black Pepper

Large Batch of Rub

  • 1 C. Season Salt

  • 1 C. Lemon Pepper

  • 2 2/3 T. Onion Salt

  • 2 2/3 T. Celery Salt

  • 1 1/3 T. Cayenne Pepper

  • 1/3 C. Black Pepper

Start by defrosting the shrimp in a colander under running water and peeling the shrimp. Next add rub to your desire and mix on to the shrimp. I like a little more coating on the shrimp. Don't cover it completely but you want enough that all of the shrimp have good flavor.

In a separate bowl, mix together the Worcestershire Sauce and melted butter. Squeeze the juice of the lemon into the bowl. (Save the lemon).

Place the shrimp in a disposable aluminum 8x8 pan. Pour the mixture in the bowl over the shrimp. Throw in the lemon for additional flavor during the smoke.

Place the pan in the smoker at 250°F for about 45 minutes. I prefer apple wood for this smoke although any fruit wood will do. 

Remove the shrimp form the smoker and pan and place on plate. Garnish the finished shrimp with chopped Parsley and enjoy as an hors d'oeuvre or with your brisket or ribs.
