"For smoked oysters order Washington oysters.

I get them shipped fresh & shucked overnight.

Blanch 3 minutes. Brine 45 minutes.

Air dry on fish rack 45 minutes.

Alder wood only. Set smoker to 225F.

Smoke until very firm and chestnut colored.
