Summer Harvest Angel Hair
with Smoky Dried Tomatoes

    Toss 8oz of cooked angel hair pasta with a spinach sauce:
    1 10oz package creamed spinach
    1 cup frozen corn
    1 cup dried smoked tomatoes from my SmokinTex 1400
    2 slices provolone cheese
Heat spinach according to package instructions.

Add frozen corn and chopped dried tomatoes (also from frozen is what I had).

Stir in cheese. Heat until hot, about 2 more minutes in microwave.

Add to hot cooked pasta, adding up to half cup pasta water to get a good consistency. Salt and pepper.
