The potatoes above were smoked with hickory, then all the pulp was removed and mashed with milk, butter, sour cream, and one egg. Seasoning added was: a pinch of white pepper, a pinch of nutmeg, and fresh ground pepper and salt to taste.

Top with bacon crumbles.

You can hold this in the refrigerator and reheat in the oven later at 350°F for 40 minutes.

This recipe is great for making in the morning and serving to company in the evening.
