I tried this recipe and it turned out great except, the skin was like hard leather. Any suggestions how to get it crispy but not leather. I rubbed it with minced onion and sesame oil.

My first thought would be the sesame oil would cause the skin to be tough, Or it could be possible that you had an old
rooster. Try free range if possible. I on occasion use free range from the local Amish. Just my thoughts.
I'll have to try the beer canned chicken soon. It sounds tasty.
