Rick -- Consider yourself blessed! ;) Not everyone gets to experience the "big bang!" My unit is eight years old. I experienced the third bang about two weeks ago. Always interesting. I'd LOVE to witness the neighborhood cat sniffing around when that puppy went off. Nothing I enjoy more that scaring the crap out of a cat!

Enjoy your smoker, all is well... ;)

Happens to me everytime I smoke - about 15-20 minutes in. Why does the smoker do that? Scares the crap out of me and my hubby.

It's nothing to worry about. The wood gets hot and it desperately wants air so it takes a quick gulp through the door cracks and then quickly ignites. That's the boom. I haven't quite figured out the hiss part. I get this every now and then. It's make you jump right out of your socks if you're near the smoker when it happens. I always make sure the door handle is cinched down good. I've been burning woodstoves my entire life and I've seen many variations of this with airtight stoves but I haven't experienced the hissing before. I think the hissing sound is air going out of the box to equalize pressure after the gulp of air that it took in, but I'm getting in over my head. -)

While it was a little anemic, I had my first boom and hiss yesterday. I had some time while working on other projects and thought I'd do a quick run on some cheese. I had a crosswind blowing, and was a little puzzled when I didn't see smoke coming out of the vent, but out the drain hole in the bottom, and then the wind would change a little and I'd get the coolest column of smoke coming out the vent hole, then the wind would change again and the smoke would go out the drain again. I was in the garage and heard a small boom and hiss, and went out to look and she's belching smoke out the top like a steam whistle. Pretty cool.
Cheese turned out great as well! I found separating the pieces in string cheese packages leaves them nice and snoky all the way around.

Just make sure that after you hear the boom and hiss you don't open the door to see what happened!!!!!! I did that one time and a flame came out and burned my face and hair!!!!
