Hello, everyone! I purchased my first smoker from SmokinTex and it is scheduled to be delivered tomorrow (Yay!). I bought the 1100 smoker because it's just me and my wife, but I have a couple of questions.

1) I also purchased the rib hangers, but am thinking the box may be too small to hang racks of ribs....I guess I could cut the racks in half if necessary, but does anyone know if I can hang whole racks in the 1100?

2) Im thinking the manual tells you about breaking it in, but what do I have to do before I smoke the first time? I want to smoke on Monday and want to make sure I am prepared.

Thanks for your help in advance and I cant wait to start the smoke!!

Congrats on your purchase! :D Don't think you'll get "whole racks" in the 1100. Go ahead and cut them in half. You'll do fine.

Haven't read the newer manuals. For seasoning your 1100, I would go ahead and toss in a pork butt or another fatty cut. Pork butt is so forgiving. Smoke that puppy to 195* internal temp. Wrap it in foil, then in a towel and let it rest in a cooler for at least an hour. Unwrap & pull it. Great eats & your unit is seasoned as well.

Your1100 will come with a small pack of wood for break-in load up the wood box with these 4 pieces of wood and plug it in. After that load it up with meat and go to town. You'll love it . Just don't clean your ST with any harsh cleaners just a hot rag to remove the grease and grime from the inside and leave all that perfect black seasoning.... Good Luck.....Steve
