A way to marinate quickly, besides injecting, is to vacuum-seal with
the marinade. At SmokinTex we prefer to vacuum-seal wings. Because of
the size of the wings, it's hard to inject wings. Choose your favorite
marinade. We use Tony Chachere's. Marinate 4 hours or over night.
Smoke-cook at 220° F for 1 1/2 hours. Use 2 ounces of hickory.
