Marinade:

  • 2 cups apple vinegar
  • 1 cup salad oil
  • 1 tsp. salt
  • 1 tsp. white pepper
  • 1 tbs. poultry seasoning
  • 1 tbs. granulated garlic
  • 1 whole egg
  • 1 large chicken, cut up

Mix ingredients, and pour over chicken. Refrigerate in a plastic freezer bag overnight, turning often. Remove chicken from marinade and discard marinade. Smoke-cook chicken pieces at 225F for 2-1/2 hours. Use 2 ounces of apple wood. You can also vacuum-seal. (See Wings)
