I LOVE smoked, mashed potatoes. When cooking meats, I just rub a few potatoes with vegetable oil and put them on the lower rack of the smoker. In a couple hours, when smoked at 225 degrees, they will be nice and done. Then, I peel them and add finely chopped green onions, fresh ground black pepper, salt and butter. YOU TALKING ABOUT SOME TASTY MASHED POTATOES!
